Manatakis is a Greek and Italian-American Orthodox Christian chef who has appeared on the Food Network’s Chopped and winner of the Family Food Showdown cooking competition. Sophia says her dream to become a chef came from her faith, feeling fearless, and being self confident. Even when her path seemed uncertain, she chose to trust in her faith. Chef Sophia is also a recipient of the Orthodox Christian Network 30 under 30 entrepreneurship award. Sophia has recently published Our Greek Kitchen, the first of many cook-calendars, has a catering business and is a private culinary instructor. Sophia’s intensity and passion for culinary art is unmeasurable.

Easy Baklava Sugar Cookies
1/4 cup butter
1/4 cup powdered sugar
2 Tablespoon powdered sugar for garnish
4 Tablespoon of honey
3/4 cup chopped walnuts finely chopped
3/4 cup chopped almonds
1/4 teaspoon cinnamon
1 package sugar cookie dough
1 jar of Nutella
In a small saucepan, over low heat, melt butter; stir in the powdered sugar and honey. Bring to a boil and remove from heat. Stir in walnuts and cinnamon. Let it cool for 30 minutes.
Divide cookie dough into 24 pieces and roll each into a ball. Place 2 inches apart on a cookie sheet that’s been greased or lined with parchment paper or silicone baking mat.
Bake at 350 degrees for 9 minutes. Remove cookies and place a small teaspoon of the nut mixture in the center of each cookie.
Bake another 2-3 minutes until done. Transfer to a wire rack to cool. Garnish with powdered sugar or a drizzle of Nutella!
Grain Free Gingerbread Cookies
2 3/4 cup almonds
1/2 cup arrowroot or tapioca starch
1 teaspoon cinnamon
1 1/2 teaspoon ginger
1/2 teaspoon cloves
1/4 teaspoon nutmeg
1/2 teaspoon kosher salt
1/2 teaspoon baking soda
1/2 cup molasses
1/4 cup honey
3 tablespoons coconut oil
Preheat oven to 350 and grease two cookie sheets very well, or line with parchment paper.Place almonds and arrowroot/tapioca in food processor and pulse until they become a fine meal (don’t overdo it—you may end up with almond butter!).Put into a large bowl and whisk in the spices, salt, and soda.In small saucepan, heat molasses until warmed. Remove from heat and stir in honey and coconut oil. Pour over the almond mixture and mix well.Divide dough into until about 1/4 inch thick. Bake for 10 minutes. Let cool for a few minutes before cutting into shapes.Remove from pan and devour.
Easy 4 Ingredient Chocolate Cookies
1 box devil’s food cake mix
2 large eggs
1/3 cup of oil
30-40 Hershey Kisses of your choice
Powdered Sugar for garnish (optional)
Preheat the oven to 350 degrees and line cookie sheets with parchment paper. In a bowl Combine cake mix, eggs and oil until smooth. Scoop into balls a little smaller than a Tablespoon onto cookie sheets and bake for 5-7 minutes. (Cake mix cookies will bake up tall and not spread too much so if you want a flatter cookie, pat the dough down a little before baking.) Let cool for 3 minutes and then gently press an unwrapped Hershey Kiss into each cookie. Easy Tasty and Fun!
