Ingredients:

1 Bunch Beets with tops
Garlic – coarsely chopped
Olive Oil
Balsamic vinegar
Salt & Pepper
(Measure with your heart 🙂

Preparation:

  1. Cut the greens off the Beet Root and reserve
  2. Rinse well
  3. Peel the beets
  4. Slice into desired size
  5. In a pot, boil the beet roots in salted water for about 15 minutes * Add the greens to the pot and continue boiling until tender
  6. Drain – (you can reserve the liquid to add to fruit smoothies, juices or soups)
  7. Place in a serving dish – Sprinkle the garlic, salt & pepper to taste, drizzle olive oil and balsamic vinegar
