Ingredients:

1 Pound Dried Red Split Lentils
2-3 Carrots
1/4 Cup Olive Oil
1 Onion – thinly sliced
Salt & Pepper to taste
Water (enough to cover the lentils by at least an inch)

Preparation:

  1. Rinse lentils, strain & add to a pot
  2. Peel carrots, rough chop and add to the pot
  3. Add enough water to cover the lentils by an inch
  4. Add Salt and Pepper to taste
  5. Bring to a boil then lower to medium and simmer for about 30 minutes
  6. While Lentils are cooking away, thinly slice an onion into slivers and sauté in olive oil until wilted and translucent.
  7. Use an immersion blender to puree the lentils (a regular blender works just fine)
  8. Add the onions, stir and serve with a side of crusty bread! (Adjust salt and pepper as needed)
