Foule Medames

Ingredients:
2 Cans Fava Beans
1/2 Cup Olive Oil
1 Lemon ~ Juiced
2 Garlic Cloves ~ mashed
1 Teaspoon Cumin
Salt & Pepper to taste
Water

Preparation:

  1. Drain & rinse Fava Beans
  2. Heat in a pot with about 1 can filled with water
  3. Once heated, mash
  4. Add the rest of the ingredients and mix
  5. Set aside
  6. Prep a finally chopped salad with an Olive oil and vinegar dressing (salt, pepper to taste & oregano)
Tahini Sauce

Ingredients:
1 Cup Tahini
1 Lemon ~ Juiced
2 Garlic Cloves ~ mashed
1/2 – 1 Teaspoon Cumin
A shake of Red Pepper Flakes
Salt to taste
Water

Preparation:

  1. Mix Tahini well in the jar combining the paste at the bottom with the oil floating on top, add to a bowl (Pops used a handheld mixer, this works really well in a small food processor)
  2. Beat the tahini, add water and keep mixing until well combined and tahini turns white
  3. Add lemon juice, garlic, salt, cumin, red pepper flakes and keep going until you get the consistency you like it. This can be made much looser so that it pours instead of spreads. Keep adding water until you reach your preference.
