Virtual Cooking Fundraiser with Celebrity Chef Sophia & Recipe

At Orthodox Christian Network we have prepared a program you won’t want to miss. Chef Sophia will teach viewers how to cook Family Recipe Kofta Kebob.

Ingredients

You will need the following ingredients on your shopping list:

  • 1 pound ground lamb (or ground beef)
  • 4 garlic cloves
  • 1/2 inch piece ginger , peeled
  • 1 large onion, peeled
  • fresh parsley bunch
  • 2 tbsp fresh mint
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp cinnamon
  • 1 tsp ground black pepper
  • 3 cucumbers peeled and cut into thin slices
  • 8 oz labne yogurt
  • 3 tablespoons salt
  • 2 tomatoes
  • 1/4 red onion diced
  • 2 tbsp EVOO
  • Juice from one lemon
  • 1 teaspoon dried mint

Kofta Kebob

  • 1 pound ground lamb (or ground beef)
  • 3 garlic cloves
  • 1/2 inch piece ginger , peeled
  • 1 large onion, peeled
  • 3 tbsp fresh parsley
  • 1 tbsp fresh mint
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp cinnamon
  • 1 tsp ground black pepper
  • 1 tsp salt
Soak your bamboo skewers in water for a minimum of 15 minutes. Add all of the ingredients into the food processor,Except the lamb.Pulse until finally minced.Add the spices to the ground lamb. Take a handful of the meat mixture and form into a meatball. Thread onto the skewer and roll the meat in your hands to flatten it into a long egg type shape. Do this with the remaining meat mixture. This will insure maximum caramelization on the meat. Heat the grill to high heat. Place the kebabs on grill (or grill pan) and cook for about 5 minutes. Turn and cook another 5 minutes or until the meat is no longer pink. Remove from the grill.

Labne Cucumber Yogurt Dip:

•1 cucumber peeled and cut into thin slices
•8 oz labne yogurt
•2 tablespoons salt
•1 tablespoon fresh mint
•1 clove garlic
Place sliced cucumbers in a Strainer and sprinkle with salt. Set aside.While salted cucumber slices sit, crush garlic and mash together with fresh mint leaves using a mortar and pestle or wooden spoon.Combine yogurt garlic and mint mixture.Stir and Fold in the cucumber slices and serve cold.

Middle Eastern Salad:

•2 tomatoes
•2 cucumbers chopped into small chunks
•1/4 parsley chopped
•1/4 red onion diced
•2 tbsp EVOO
•Juice from one lemon
•1 teaspoon dried mint
•Salt pepper to taste
Got your cucumber lengthwise and remove seeds using a spoon.Tomatoes onions and cucumbers and put into a medium-size bowl.Chop the parsley fine and put it into the bowl.Add the olive oil lemon juice and season with salt and pepper.
