Greek Potato Salad – Patatosalata

Ingredients:

3 Large Potatoes
3 Green Onions ~ Chopped
1 Bunch Parsley ~ Chopped
1 Lemon ~ Juiced
Olive oil – Drizzle to your hearts content
Salt & Pepper to taste

Preparation:

  1. Peel and cube potatoes
  2. Boil until tender but not falling apart
  3. Drain, add to a bowl
  4. Mix in the rest of the ingredients and serve chilled!
