Chef Sophia will be demonstrating a unique Lenten recipe that is both healthy and balanced. The demo will last about 20-30 minutes. The recipe she’ll be creating for us is “Greekamole” (Greek-style twist on guacamole) with shrimp and crispy pita tostada.
Greekamole Recipe
Ingredients:
•2 avocados •1/2 red onion minced •1 tbl Capers •1 tbl dill •1 tbl mint •1 tbl olive oil •1 tbl kalamata olives chopped •1/4 cup cherry tomatoes sliced •1 lime juiced and zested •3 sprigs green onion •1 tbl fresh parsley For the shrimp •1 pound shrimp •1 tbl olive oil •Lemon zest from Guacamole •Red pepper flakes 1 teaspoon dried oregano Method Put all ingredients into a bowl and mix for the Guacamole. For the shrimp just salt pepper oregano and seer 1 to 2 minutes until pink and cooked through. Pita Cook in a pan oil of choice a pan low and slow until crispy.
