Live Lenten Cooking Demo with Celebrity Chef Sophia "Greekamole"

Celebrity Chef Sophia will be live on myOCN Facebook LIVE Wednesday, March 31st at 7pm EST. In coordination with our Lenten Nourishment Study Group led by Orthodox Dietitian, Krista Fedorchak. Chef Sophia will be demonstrating a unique Lenten recipe that is both healthy and balanced. The demo will last about 20-30 minutes. The recipe she’ll be creating for us is “Greekamole” (Greek-style twist on guacamole) with shrimp and crispy pita tostada.

Greekamole Recipe

Ingredients:

•2 avocados
•1/2 red onion minced 
•1 tbl Capers 
•1 tbl dill 
•1 tbl mint 
•1 tbl olive oil 
•1 tbl kalamata olives chopped 
•1/4 cup cherry tomatoes sliced 
•1 lime  juiced and zested 
•3 sprigs green onion 
•1 tbl fresh parsley 

For the shrimp 
•1 pound shrimp 
•1 tbl olive oil 
•Lemon zest from Guacamole  
•Red pepper flakes 1 teaspoon dried oregano 

Method
Put all ingredients into a bowl and mix for the Guacamole. For the shrimp just salt pepper oregano and seer 1 to 2 minutes until pink and cooked through. 

Pita 
 Cook in a pan oil of choice a pan low and slow until crispy.

Growing up in her family’s Greek restaurant Uncle Nick’s, paved the way of her dream to be a chef. Sophia Manatakis Graduated from the French Culinary Institute in 2012.Taking the opportunity to be a sous chef in the Mentor Young Chef competition ignited her self confidence to start cooking on her own. Sophia realized making short term career goals in the cooking world was the key to being happy. Along the way, she finally started her own cooking company which provides meals for people trying to meet fitness goals. Sophia appeared on Food Networks chopped in 2017. Since being on chopped, doors have opened and Sophia is getting noticed in the culinary world. The Orthodox Christian Network recognized her with the 30 Under 30 entrepreneurship award for Culinary Arts at 24 years old. Today, you can still find Sophia going after each dream. In fact, the most recent accomplishment was a grant, given by the Mentor BKB company, where she chose to further her education in Italy.
